Fricasseed Coon

7lb Raccoon fat removed cut into 8 to 10 pieces
1cup Flour seasoned with 2tbl Salt and 1/2tsp Freshly-ground black pepper
4tbl Butter
2cup Broth

Instructions : Roll meat in seasoned flour, and brown in hot butter in a heavy Dutch oven. Add broth, cover, and simmer for 2 hours, or until tender. This recipe yields 8 to 10 servings.
