Coon Loaf
2lb Fat-free raccoon meat ground
1/2cup Cracker crumbs
1/2cup Ground onion
1 1/3tsp Salt
1/2tsp Freshly-ground black pepper
2x Eggs lightly beaten
1/4tsp Ground thyme
1cup Evaporated milk
Instructions : Mix all together well and form into a loaf; place in a greased loaf pan. Set loaf pan in another pan of hot water, and bake at 350 degrees for 1 3/4 hours. This recipe yields 6 to 8 servings.
